Shortly after the soft pressing of the grapes, the must then undergoes
cold static clarification, and the subsequent alcoholic fermentation takes place at a controlled temperature (13-14 °C) in stainless steel tanks. Metodo Classico consists of inducing re-fermentation directly in the bottle, for 50-60 days in the underground cellar, and the bottles obtained ripe on the yeasts over 12 months. Traditional remuage on pupitres (riddling racks) and dégorgement à la glace, followed by a further refinement in the bottle.

TASTING NOTES

Straw yellow with green reflections. The perlage is minute, tight and persistent. Fine and complex, with floral notes of white pulp fruit, completed with nuances of
almond and acacia honey. Elegant, savoury, mineral and with a harmonious structure with great balance and excellent persistence.
